SHRIMP ETOUFFE 
1/2 c. butter
1 1/2 tbsp. flour
1 lg. onion, chopped
1/2 c. celery, chopped
1 clove garlic, minced
1/4 c. green pepper, chopped
Salt and pepper to taste
1/4 c. parsley flakes
2 tbsp. or more tomato paste
1/4 tsp. thyme
1 to 1 1/2 c. water
1 to 2 c. shelled shrimp
1/4 c. white wine (optional)

Melt butter. Add flour. Add onion, celery, garlic. Cook until tender. Add seasonings, tomato paste and water. Let simmer 15 minutes. Add shrimp and cook until done. Add wine and serve over rice.
