FRESH APPLE CAKE 
1 c. Wesson oil
2 c. sugar
2 eggs
1 tsp. vanilla
2 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
3 c. diced apple
1 c. pecans
1 tsp. baking soda

Cream together oil and sugar; add eggs, one at a time. Sift dry ingredients twice and add gradually to the creamed mixture. Lastly fold in diced apple, vanilla and nuts. Put into a greased and floured 9"x13" pan. Bake in 350 degree oven for 55 minutes. May be served either warm or cool.
