FRICKEN CHICKEN 
4 tsp. olive oil
1 quartered chicken or chicken parts if preferred
3 cloves garlic, chopped
2 onions, sliced
1 can tomato sauce
1 can tomato paste
2 env. Sazon Goya (sold in Spanish stores)
1 can beer
1 c. white wine or if preferred red wine
4 potatoes, peeled & quartered
1 pkg. mushrooms, whole or sliced
Salt & pepper to taste

Saute chicken, garlic and onions in olive oil. Add mushrooms, tomato sauce and paste. Pour one can of beer and add the wine. If sauce becomes too thick add 1/2 cup water, season to taste with salt and pepper. Add 2 envelopes of Sazon Goya and the quartered potatoes.

Bring to a boil then lower heat, cook on low for 30 minuets or until tender. Serve with rice, garnish with avocado and red pimiento.
