CREAMY APPLE SOUP 
1 c. celery, diced
1 c. chopped onion
2 c. unpeeled, 1/2 inch apple chunks
3 tbsp. butter
4 c. chicken broth
1/2 c. non-fat dry milk powder
Salt and pepper to taste

Saute celery, onions, apple chunks in butter until tender. Add both, cover and simmer over very low heat 10 minutes. Press through sieve or food mill - return to saucepan. Stir in milk powder, salt and pepper. Heat through. Garnish with apple wedges.
