BRUNCH ENCHILADAS 
1 1/2 c. ground ham
1/2 c. sliced green onions
1/2 c. chopped green pepper
8 (7 inch) flour tortillas
2 1/2 c. grated Cheddar cheese
4 beaten eggs
2 c. light cream or milk
1 tbsp. flour
1/4 tbsp. salt
1/2 tbsp. garlic powder
Few drops Tabasco or Picante sauce

Combine ham, onion and green pepper. Place 1/3 cup of this mixture and 3 tablespoons cheese on each tortilla. Roll and place in a 12x7 inch pan.

Combine eggs, cream, flour and other spices. Pour over tortillas. Cover and refrigerate several hours or overnight. Bake uncovered at 350 degrees for 45 minutes. Sprinkle with remaining cheese and bake a few minutes longer or until cheese is melted. Let stand 10 minutes.
