CARROT CAKE | |
2 c. cake flour 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 2 c. sugar 4 eggs 1 1/4 c. cooking oil 2 c. grated carrots Sift dry ingredients together. Mix eggs, cooking oil and carrots together and add to dry ingredients. Beat hard. Bake in three 8 inch layer pans at 350 degrees until done - about 35 minutes. ICING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 box confectioners' sugar 1 c. chopped pecans Cream cheese and butter. Add sugar gradually. Blend in pecans. Frost cake. |
