WINTER PATE 
1/4 lb. mushrooms, chopped
1 sm. onion, minced
1 garlic clove, minced
1/2 tsp. dried thyme leaves
1/2 tsp. pepper
1 tsp. salt
1/8 tsp. ground allspice
3/4 lb. sweet Italian sausage links, remove casings & chop meat, discard casings
3/4 lb. ground chicken
1 egg + 3 tbsp. water
1 (4 oz.) jar pimentos, drained & chopped
1/ c. shelled pistachios
1 (10 oz.) bag spinach, fresh
2 tbsp. chopped parsley

In a medium or large skillet, heat 4 tablespoons or 1/2 stick butter. Cook mushrooms, onion, garlic salt and pepper, thyme and allspice until onion is tender and mushrooms golden brown. Combine mushroom mixture, sausage meat, chicken, egg, pimentos, pistachios, 3 tablespoons water, parsley. Beat until well mixed. Wilt spinach with hot water, dry.

In 8 1/2 x 4 1/2 inch loaf pan, brush bottom and sides with butter, line with spinach leaves overlapping. Spoon meat mixture into pan, fold spinach over. Cover pan with foil and bake in 350 degree oven for 1 1/4 hours. Drain, weigh down, cool overnight in refrigerator. 12 first course servings.
