OYSTERS ROCKEFELLER HERO CASSEROLE | |
2 (10 oz.) pkgs. frozen spinach 1 (10 1/2 oz.) can condensed cream of mushroom soup, undiluted 1/4 c. cheddar cheese 1/2 c. Parmesan cheese, grated 1 tbsp. anchovy paste 3 tbsp. Worcestershire sauce 1/4 c. green onions 1/4 c. parsley 2 oz. absinthe liquor 3/4 c. toasted bread crumbs Salt, pepper & cayenne to taste 12 - 16 oysters Paprika Microwave spinach until completely thawed. Drain spinach and spread over the bottom of a 9"x13" dish. Top with oysters. In a 1 quart dish, mix together the remaining ingredients except for the bread crumbs. Microwave at High for 5 minutes, stirring after 2 1/2 minutes, until cheese is melted and blends smoothly with soup. Add sauce to casserole dish and top with crumbs. Sprinkle with paprika. Microwave on High for 15 minutes, uncovered. Rotate dish 1/2 turn after 5 minutes and 10 minutes. Let stand 5 to 7 minutes before serving. Serves 4. |
