PORCUPINE MEATBALLS 
1 lb. hamburger meat
1/4 c. bell pepper, chopped; optional
1 egg
1/4 c. onion, chopped
1/2 c. uncooked rice, may use quick rice
1/4 c. mushroom soup

Mix all above ingredients real well. Roll out in medium balls. Brown in a heavy skillet with a little oil. Pour remaining mushroom soup and 1 cup water over meat balls; let simmer until rice is done.
