CARROT CAKE 
1 1/2 c. Wesson oil
2 c. sugar
4 eggs
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla
3 c. carrots, grated
1 c. chopped pecans

Combine sugar and oil and add eggs. Sift flour, soda, salt and cinnamon together. Add to sugar mixture and beat well. Add vanilla and grated carrots. Bake in three 8 inch layer cake pans or a bundt pan for 45 minutes at 350 degrees.
