SHISH-KABOB WITH SEASONED RICE 
1 lb. lamb, (or beef), cut in 1 1/2 inch cubes
1 c. cherry tomatoes
1/2 c. green pepper chunks

Assemble to meat, tomatoes and green pepper in alternating fashion on shish-kabob skewers. 1/2 c. mayonnaise or salad dressing 1/2 c. sliced mushrooms 1/4 c. diced green pepper 2 tbsp. chopped parsley 2 tbsp. chopped onion 1 tbsp. milk 1/2 tsp. garlic powder 1/4 tsp. pepper 1/4 tsp. salt

Prepare brown rice according to directions, omitting butter. Combine mayonnaise and seasonings; add rice and mushrooms; toss lightly. Spoon rice mixture into baking dish; place shish-kabob skewers on top. Bake at 350 degrees for 40 minutes, turning skewers several times while baking. Serves 4 to 6 people.
