SAVORY BEETS 
2 1/2 c. diced beets
1/4 c. sour cream or yogurt
1 tbsp. tarragon vinegar
3/4 tsp. sugar
1/2 tsp. salt
1/2 tsp. minced green onion
Dash cayenne

Heat beets; drain. Combine remaining ingredients; add to beets. Heat slowly. When hot, serve immediately. Serves 4.
