BEET SOUP 
8 lg. cooked sliced beets with the greens, cleaned & broken up
4 c. water
Salt & pepper
3 slices fried bacon
1 pt. sour cream

Combine beets, greens and water in a 2 quart saucepan. Bring to a boil. Reduce heat and simmer 2 hours. Stir in sour cream slowly and add bacon. Salt and pepper to taste.
