COLD RED BEET SOUP 
1 bunch fresh red beets
1 onion (sm.), diced up
1 sm. bunch fresh dill
1 pt. sour cream
5 (8 oz.) glasses cold water
1 tbsp. salt or to your taste

Wash beets, cut off stems but leave skins on. Boil until beets are soft then remove skins. Cut the beets in bite size pieces and put in a big bowl. Cut onion in small pieces and put on top of beets. Cut dill fine and place on top of beets. Add sour cream and salt. Mix well. Add 5 glasses of water and mix well. Cover and cool in refrigerator for 3-4 hours.

Good served with small potatoes, boiled, cut up and browned with chopped onion in 4 tablespoon of butter, and served with hot dogs or kielbasa.
