COLD BEETS IN MUSTARD DRESSING 
1 lb. beets or 16 oz. can, drained
1 tbsp. olive oil
1 tbsp. vinegar
1 tsp. Dijon mustard
1/2 tsp. thyme and basil, mixed
Salt and pepper to taste

Cut beets into chunks. Prepare dressing by combining remaining ingredients. Add beets and marinade at room temperature 10-15 minutes. Serve at room temperature or cold.
