SWEET POTATO AND CASHEW
CASSEROLE
 
1/2 c. packed brown sugar
1/3 c. broken cashews
1/2 tsp. salt
1/4 tsp. ground ginger
2 lbs. sweet potatoes, cooked, peeled and cut crosswise into thick slices (5 or 6 med. potatoes)
1 (8 oz.) can peach slices, well drained
3 tbsp. butter

Combine brown sugar, cashews, salt and ginger in bowl. In a 10x6x2 baking dish, layer 1/2 potatoes, half the peaches and 1/2 brown sugar mixture. Repeat. Dot with butter. Bake covered in a 350 degree oven for 30 minutes. Uncover and bake 10 minutes more. Spoon brown sugar syrup from pan over potatoes before serving. Makes 6-8 servings.
