IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. Bisquick baking mix
2 tbsp. butter
1 can (13 oz.) evaporated milk
2 eggs
1 can (16 oz.) pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Heat oven to 350 degrees. Lightly grease pie plate, 9 x 1 1/4 or 10 x 1 1/2 inches.

Beat all ingredients until smooth, 1 minute in blender on high speed or 2 minutes with hand beater. Pour into pie plate. Bake until golden brown and knife inserted in center comes out clean, 50 to 55 minutes. Garnish with whipped cream if desired. Refrigerate any remaining pie.

High Altitude Directions (3500 to 6500 feet) : Heat oven to 375 degrees. Bake 45 to 50 minutes.
