ZUCCHINI CASSEROLE | |
6 average sized zucchini, cut in 1/2" chunks 6 carrots, grated 2 1/2 c. seasoned croutons 1 c. sour cream 1 can cream of mushroom soup 1 lg. onion, chopped 1/2 stick butter 1 1/2 c. shredded cheddar cheese Season with pepper Saute carrots and onion in melted butter. Stir soup, sour cream and 1 cup of cheese together. Pour over zucchini, croutons, carrots and onions. Mix well. Pour into 9"x13" pan. Cover and bake 45 minutes at 350 degrees. Uncover and sprinkle on remaining 1/2 cup of cheese. Bake until cheese is melted. |
