ZUCCHINI CASSEROLE 
Zucchini, sliced not peeled
Fresh tomatoes, sliced
Onion, sliced into rings
1 bag or box croutons
16 oz. shredded cheese
1 stick butter, melted

Layer zucchini slices, tomato slices, and onion in a casserole dish (about 1 1/2 quart size). Cover with a layer of cheese and croutons; salt and pepper to taste. Layer each twice ending with cheese. Drizzle melted butter over all. Cover and bake at 350 degrees for 1 1/2 hour or until vegetables are cooked. Amounts of vegetables and other ingredients will vary depending on the size you wish to serve. A great garden vegetable dish.
