SAUSAGE & EGG CASSEROLE 
2 lb. link sausage
8 slices white bread
3/4 lb. grated cheddar cheese
4 eggs (or egg substitute)
1 can mushroom soup
2 1/4 c. milk
Sm. green pepper, sauteed
1/4 c. parsley flakes

Fry sausage, drain and cut up. Trim crusts from bread and cut in cubes. Grease 4 quart casserole. Place bread cubes in bottom, sausage pieces and cheese. Beat eggs, add milk and soup and pour ingredients in casserole. Let set overnight in refrigerator. Bake at 350 degrees, covered for 1 1/2 hours or longer. 8 servings.
