SPICED SWEET POTATO FRIES 
1 tbsp. canola oil
1/4 tsp. ground cinnamon
2 lb. sweet potatoes, peeled and cut lengthwise into 3/4-inch thick wedges
1/2 tsp. salt
1/8 tsp. cayenne pepper

In a large bowl, combine oil with salt, cinnamon and cayenne. Stir in sweet potatoes until each piece is well coated. Arrange sweet potatoes in a single layer on a baking sheet.

Bake at 400°F for 30 minutes. Turn potatoes; bake until lightly browned, about 10 minutes. Remove from oven; place on serving platter.
