SHRIMP SCAMPI | |
2 lb. shrimp (medium-large) 1 1/2 sticks butter 1/4 c. chopped onion 3 tbsp. minced garlic 1 tsp. salt 1/2 tsp. pepper 2 tbsp. lemon juice 1/4 c. chopped parsley or parsley flakes Shell and clean shrimp. Sauté shrimp in butter with onion and minced garlic for 5 minutes on each side or until done. Transfer shrimp to hot serving dish and set aside. Add salt, pepper and lemon juice to butter mixture and heat for 5 minutes. Pour mixture over shrimp and sprinkle with parsley for garnish. Ready to serve over pasta or rice. |
