HOMINY CASSEROLE 
2 (15 1/2 oz.) cans yellow hominy, drained
2 c. white sauce (recipe follows)
1 1/2 c. shredded Cheddar cheese
5 or 6 slices bacon, partially cooked and drained

Prepare the sauce and add the hominy and cheese. Turn into a buttered 2-quart dish. Place half-cooked bacon on top. Bake at 350 degrees for about 25 minutes.

WHITE SAUCE:

2 c. milk
4 tbsp. butter
4 tbsp. all-purpose flour
1/2 tsp. salt
Pepper to taste

Heat milk but do not scald. Melt butter in saucepan. Add flour and stir. Heat on low long enough for flour to cook, about 1 minute. Add milk all at once and stir once or twice. Continue cooking but do not stir until sauce has thickened. Add salt and pepper to taste.
