CHOCOLATE FROSTED COCONUT COOKIES | |
1/4 c. soft butter 3/4 c. sugar 2 eggs 1/2 c. sour cream 1/2 tsp. vanilla 1/4 tsp. baking soda 1/4 tsp. baking powder 1/4 tsp. salt 1 1/3 c. all purpose flour 1 c. flaked coconut CHOCOLATE ICING: 1 tbsp. butter 1 (1 oz.) sq. unsweetened chocolate 3 tbsp. cream or milk Dash of salt 1/2 tsp. vanilla 1 1/2 c. powdered sugar Cream butter with sugar until blended. Add eggs and mix well. Stir in sour cream, vanilla, baking soda, baking powder, and salt. Add flour and coconut. Mix until stiff dough forms. Drop by rounded spoonful onto slightly greased cookie sheet. Bake at 400 degrees for 8-10 minutes or golden around edges and firm to touch. Frost when cool. ICING: Place butter and chocolate in double boiler. Melt over hot water. Stir in cream or milk, salt, vanilla, and confectioner sugar. Mix until glossy adding more milk if necessary. |
