BROCCOLI QUICHE 
1/2 lb. broccoli, cooked, coarsely chopped
1/2 lg. pepper, chopped
1/2 lg. red pepper, chopped
1 sm. onion, chopped
1 clove garlic, chopped
1/4 lb. mushrooms, chopped
1/4 c. olive oil
1/2 tsp. salt
4 eggs, slightly beaten
1/2 c. milk
3/4 c. Gruyere cheese, grated
3/4 c. grated cheese
1 pie crust

Saute vegetables in olive oil. In a pie crust, layer vegetables. Mix eggs, milk, salt and cheeses together. Pour over vegetables. Bake on a cookie sheet in a preheated oven at 375 degrees for 35-40 minutes.
