BROCCOLI RICE QUICHE 
2 c. hot cooked rice
5 oz. Cheddar cheese
3 eggs
1 tsp. salt
1/2 c. onions, chopped
1 (10 oz.) pkg. chopped broccoli, thawed & drained
2 tbsp. milk
1/2 tsp. pepper
1 (4 oz.) can mushrooms, drained

Combine rice, 3/4 cup cheese, 2 eggs, 1/2 teaspoon salt. Press firmly into greased pie plate. Set aside. Mix broccoli, remaining beaten egg, milk, pepper, remaining salt and mushrooms. Spoon into rice shell. Cover. Bake at 350 degrees for 45 minutes. Bake uncovered for the last 10 to 15 minutes.
