PORK CHOP MEDLEY | |
3-4 end cut pork chops or pork steaks 1 can apple slices (pie filling works well) 4 sm. cooked sweet potatoes (1 can) 1/3 c. seedless raisins 1/3 c. brown sugar Nutmeg, salt & pepper 3 tbsp. currant jelly (grape or mixed fruit work fine) 3 tbsp. prepared mustard Place an equal quantity of apple slices at either end of a 12 x 8 inch baking dish. Cut sweet potatoes into thick slices and place between apples. Scatter raisins over all and sprinkle with brown sugar and nutmeg. Beat jelly and mustard until smooth. Trim excess fat from pork chops and coat both sides with the jelly mixture. Place chops on potatoes and apples and sprinkle with salt and pepper. Bake uncovered at 350 degrees for about 1 1/2 hours. Serves 3-4. |
