BLACK WALNUT BRITTLE 
1/2 c. light corn syrup or dark corn syrup
2 c. sugar
1/3 c. water
1/4 tsp. salt
3 tbsp. butter
1 c. coarsely broken black walnuts
1 tsp. vanilla flavoring

Mix first 5 ingredients in saucepan. Bring to boil stirring until sugar is dissolved. Add nuts and cook, stirring almost constantly, until a small amount of mixture separates in hard brittle threads when dropped in very cold water, 300 degrees on candy thermometer. Add vanilla and pour onto buttered baking sheet to cool. When cold, break in irregular pieces. May use almonds for walnuts.
