LINGUINE WITH HAM AND CHEESE
SAUCE
 
1 (8 oz.) pkg. linguini
4 tbsp. butter
1 sm. onion, chopped
1 tsp. flour
Salt and pepper
2 c. milk
1 (10 oz.) pkg. frozen peas
4 oz. sliced ham, cut into thin strips
2 oz. shredded Swiss cheese

Cook linguini as directed on package. Drain and return to pot to keep warm. In 2 quart saucepan, melt butter. Add onion and cook until tender. Stir in flour, salt, and pepper. Cook 1 minute. Gradually add milk, stirring constantly until thickened and smooth. Stir in frozen peas. Heat to boiling, then reduce heat and cook 2-3 minutes until peas are done. Remove from heat. Add ham and stir in Swiss cheese until melted. Pour sauce over linguini and gently toss. Pour into casserole dish and serve.
