ZUCCHINI BREAD | |
3 c. sugar 1 c. oil 2 eggs 3 c. flour 3 c. grated zucchini (if grated in blender use 1/2 c. oil for liquid to blend, then the other 1/2 c. later) 1 1/2 tsp. cinnamon 1 1/2 tsp. baking soda 2 tsp. baking powder 1/2 tsp. salt 2 tsp. cocoa 1 tsp. vanilla 1 pkg. coconut cream pudding mix (instant or reg.) 1 c. nuts (optional) Blend sugar and other 1/2 cup of oil; add eggs. Blend flour, cinnamon, soda, baking powder, salt and cocoa, alternating with the zucchini. Add pudding (dry), vanilla and nuts. Grease and flour 2 loaf pans. Bake at 350 degrees for 1 hour. |
