2 med. zucchini
1 lb. sausage
1 sm. onion, chopped
1 box Jiffy corn bread mix
1 c. shredded Cheddar cheese

Slice 1 zucchini into 1/4 inch slices. Brown sausage (drain sausage) but use the dripping to saute the chopped onion and the zucchini slices. (I do all that in the microwave.)
