CHALLAH
2 pkgs. dry yeast
1 c. lukewarm water
2 tbsp. honey
1/4 c. soft butter
4 lg. eggs, beaten
1 tbsp. salt
5 c. white flour
1-2 c. wheat flour
Sesame seeds (about 3 tbsp.)
Poppy seeds (about 1 tbsp.)

Dissolve yeast in water. Let stand 5 minutes. Set aside about 3 tablespoons of beaten egg (to be used for top of bread). Beat honey, butter, remaining eggs, salt and 2 cups of white flour into yeast mixture. Gradually mix in remaining flour. Knead dough on floured surface 15-20 minutes until smooth and uniform and unsticky.

Place in greased bowl, cover with damp towel to rise in warm place until doubled in bulk. Punch down and knead 5 minutes. Divide into thirds. Knead each third 5-10 minutes, gradually transforming it into 1 1/2 inch diameter "snake". Let them rest 10 minutes. Braid the dough and place it on a tray sprinkled with sesame seeds. Let rise then brush with egg and sprinkle with sesame seeds and poppy seeds. Bake 375 degrees for 30-40 minutes.
