ITALIAN - SAUSAGE STUFFING 
2/3 lb. hot Italian sausage
1 sm. onion
4 cloves garlic
1 1/2 tbsp. oil
1 tsp. salt
1/2 tsp. pepper
1 tsp. dried thyme
1 tsp. dried sage
1 lb. loaf firm white bread, about 8 cups, cubed
1/2 c. chopped fresh parsley
3/4 c. milk

Heat oven to 350 degrees. Prick sausage and bake until cooked through, about 30 minutes. Cool and cut into bite-size pieces. Chop onion. Mince garlic. Cut bread into cubes. Heat oil in a small pan. Add the onion, garlic, salt, pepper, thyme and sage. Cook until onion softens, about 5 minutes. Combine bread, sausage, onion mixture, parsley and milk in a large bowl. Cool.
