OVEN - CRISP CHICKEN 
1 c. mashed potato flakes
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. rosemary, crushed, or 1/8 tsp. poultry seasoning
1 egg, slightly beaten
1 tsp. lemon juice
2 lbs. frying chicken, cut up

Heat oven to 375 degrees. In plastic bag, combine potato flakes and seasonings. In shallow bowl, combine egg and lemon juice. Dip chicken pieces in egg mixture; shake in plastic bag to coat with potato flake mixture. Place chicken skin side up in ungreased 15 x 10 inch jelly roll pan. Bake at 375 degrees for 60 to 75 minutes or until chicken is tender. 6 servings.

TIP: Tarragon, basil, marjoram or thyme leaves or paprika can be added to potato flakes mixture. Onion, garlic or seasoned salt can be substituted for plain salt.
