NANA'S CHICKEN AND POTATOES | |
Cut up chicken, enough to serve 6 people 6 baking potatoes, cut in 8ths Salt & freshly ground black pepper to taste 8 fresh parsley sprigs, leaves only, chopped fine 1 garlic clove, mashed or minced garlic to taste 1 lg. Spanish onion, minced Romano cheese Olive oil Preheat oven to 375 degrees, use large baking pan. Wipe pan with oil or spray with vegetable oil and place chicken in the center and arrange cut potatoes around the chicken. Sprinkle salt, pepper, chopped parsley, minced onion, minced garlic and Romano cheese over chicken and potatoes. Spread oil sparingly, but evenly over the above. Bake in a 375 degree oven for 1 hour or until golden brown. Baste occasionally. Serves 6. |
