CHICKEN POT PIE 
1 c. chopped onion
1 c. chopped tomatoes
3 tbsp. flour
1 tsp. salt
2 c. mashed potatoes
1 c. chopped celery
2 c. chicken, cooked & chopped
1 1/2 c. chicken stock
3 tbsp. oil
1 9" pie shell, unbaked
Parsley
Paprika

Melt butter in skillet. Add celery and onion; simmer 2 minutes. Add chicken. Heat through. Mix in tomatoes. Combine flour and oil; add to stock to thicken. Stir in chicken mixture. Add salt and simmer several minutes. Pour into pie shell. Spread with mashed potatoes. Sprinkle with parsley and paprika. Bake at 350 degrees for 1 hour.
