9 DAY CUCUMBER PICKLE | |
Use small cucumbers cut into half. Fill stone jar with 3 gallons cucumbers. 1st day make a solution of 1 cup salt to 1 gallon of boiling water. Pour over cucumbers in a stone jar, be sure all cucumbers stay under water; cover and leave 3 days. 4th day drain cucumbers and make a new solution of 1 gallon boiling water and 2 tablespoons powdered alum. Pour over cucumbers. Let sit 2 days. 7th day drain cucumbers. Then make solution of 1 cup sugar to 1 cup vinegar. Place small amount of mixed pickle spice into a bag in the solution. heat to boil. Pour over cucumbers. Let sit 2 days, and if you can't get to it the 2nd day it will not hurt it to stay 3 or 4 days. 9th day reheat vinegar solution. Pack cucumbers in jars. Cover with hot solution. Seal. |
