EGGPLANT CASSEROLE 
1 lg. eggplant
Crushed Ritz crackers
1 sm. onion
3/4 c. diced ham
1 c. grated cheddar cheese
1 egg, beaten
Salt to taste
Garlic salt to taste (optional)
butter

Peel and cube eggplant. Cook until tender. Drain. Mash. Crumble equal amount of Ritz crackers (that is, use equal amounts of mashed eggplant and crushed crackers).

Mix all ingredients well. Add salt to taste. Pour into greased baking dish. Sprinkle with more grated cheese and dot with butter. Bake at 350 degrees for about 45 minutes or until cheese browns.
