MEATY EGGPLANT CASSEROLE 
1 lg. or 2 sm. eggplants, peeled and cubed
1 lb. ground beef
1 lb. onion, cubed
2 bell peppers, cubed
1 c. saltine crackers, crushed
1 c. milk
1 c. shredded cheese

Boil eggplants until tender; cook meat, onion, and pepper in frying pan 10 minutes. Drain. Mix all. Bake at 350 degrees until bubbly; put cheese on top. Bake until cheese melts and browns. Salt and pepper to taste.
