POTATO LATKES 
5-6 lg. potatoes, peeled and grated
1 med. onion, grated
1 egg
1/2 c. flour
1 tsp. salt
Pinch of baking powder

Grate potatoes and onion. Pour off excess liquid. Add lightly beaten egg, flour, baking powder and salt. Drop by spoonful onto skillet in which you have heated cooking oil. Brown on both sides. Serve golden brown with sour cream or applesauce.
