POTATO LATKES 
4 grated, peeled potatoes
1 tbsp. chopped onion
1 egg
Parsley
1/2 c. bread crumbs
Salt and pepper

Heat well oiled skillet. Mix all ingredients together. Drop onto hot skillet in 1/4 cup fulls and flatten with fork into pancakes. Cook and turn over. Serve with butter, sour cream or applesauce.
