POTATO LATKES 
6 med. potatoes, grated with coarse blade
1 sm. onion, grated
2 eggs, beaten
2 tbsp. flour
2 tsp. baking powder
1 tsp. salt
Dash of pepper
1/2 c. vegetable oil

Combine all ingredients, except for oil, mixing well. Heat half the oil in a skillet (cast-iron skillet works best); add potato mixture by tablespoon to form patties. Fry until well browned on 1 side, then turn to brown other side, adding oil when needed. Drain on paper towels before serving. Serves 6.
