ZUCCHINI NUT CHIP COOKIES 
4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
2 tsp. vanilla
2 c. shredded zucchini, unpeeled
1 c. nuts
12 oz. chips

Beat butter and sugars until light and fluffy. Beat in eggs and vanilla. On low speed mix in zucchini, then dry ingredients. With spoon stir in nuts and chocolate chips.

Grease baking sheets. Bake at 350 degrees for 15 minutes.

Makes 5-6 dozen.

RAISIN FILLING:

Combine 1/4 cup granulated sugar and 1 tablespoon cornstarch in saucepan. Stir in 1 cup water and 2 cups raisins. Cook over medium heat until thickened and bubbly. Cool.

CINNAMON ICING:

Mix 1 cup sifted confectioners' sugar with 1/4 teaspoon cinnamon. Stir in enough milk about 1-2 tablespoons for drizzling consistency.
