SWEET POTATO SOUFFLE 
3 large sweet potatoes
1 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup (1 stick) butter
1/3 cup milk

Topping:

1 cup light brown sugar
1/3 cup all-purpose flour
1/3 cup butter
1 cup chopped pecans

Boil and peel potatoes. Mash, then add remaining ingredients. Put in buttered casserole dish.

Mix topping ingredients and crumble on top of potato mixture.

Bake at 350°F for 30 minutes.
