Juice drained from pineapple plus water to make 1 c. liquid
1 sm. pkg. lemon gelatin
1 envelope plain gelatin
1 (8 oz.) pkg. cream cheese, softened
1 (No. 2) can crushed pineapple, drained
2/3 c. nuts, chopped
1 sm. jar pimento, chopped & drained (optional)
1 (12 oz.) Cool Whip
Use food coloring to make the color desired

Bring pineapple juice and water mixture to a boil. Dissolve gelatins in hot liquid. Mash cream cheese with a fork; add pineapple, nugget and pimento. Add gelatins; fold in Cool Whip then add the amount of food coloring needed. Spray mold with Pam then pour into mold and chill until firm.
