CHERRY TOMATO SALAD WITH BABY
GREENS
 
Use this salad as a base, adding any of your favorite salad ingredients. Hard Italian cheese, in cubes, black olives, anchovies, tonno (tuna in olive oil), cucumbers, chopped roasted peppers, marinated eggplant are some of the variations we've used.

Salad:

1 quart cherry red and/or yellow tomatoes, halved (about 32)
1/2 cup baby lettuce mix or Frisée
12 fresh basil leaves, minced
pinch fresh thyme or up to 1/2 tsp Italian herbs or Herbs de Provence
1 shallot, minced (optional)

Dressing:

1 tablespoon (good quality) balsamic vinegar
3 garlic cloves, minced
1 1/2 teaspoons Dijon mustard
juice of 1/2 lemon
salt and freshly ground pepper, to taste
2 teaspoons finely chopped shallots or chives
3 tablespoons extra-virgin olive oil

In a salad serving bowl, mix (washed and dried) salad ingredients.

In a small jar or blender, combine ingredients for dressing and shake until well mixed.

Pour over salad and serve.

Serves 4.
