OAT & RAISIN PANCAKES 
2 c. buttermilk
2 c. oats
2 beaten eggs
4 tbsp. melted butter
1/2 c. raisins
3 tbsp. sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1/4 tsp. salt

Soak oats in buttermilk overnight. (Yogurt may be substituted for buttermilk.) Combine all ingredients with buttermilk and oats. Spoon out 4 to 5 inch pancakes onto a hot griddle. Turn when browned on one side. Serve with syrup or jam.
