OATMEAL RAISIN PANCAKES 
1/2 c. quick cooking rolled oats
2 c. water
2 c. Hungry Jack buttermilk complete pancake mix
2 tbsp. sugar
1/2 tsp. cinnamon
1/2 c. raisins

Heat griddle to 375 degrees. Grease griddle lightly with oil.

In medium bowl, combine rolled oats and water; let stand 5 minutes. Add remaining ingredients; stir just until all particles are moistened.

Pour 1/4 cup of batter for each pancake onto hot griddle. Cook 1 to 1 1/2 minutes, turning when edges look cooked and bubbles begin to break to the surface. Continue to cook 1 to 1 1/2 minutes or until golden brown. 14 to 16 pancakes.
