BEEF-PEPPER-RICE SKILLET 
1 1/2 to 2 lb. steak, cut in thin strips
2 tbsp. oil
1 c. sliced onion
1 box UNCLE BEN'S® long grain and wild rice
1 can beef broth
1 can water
2-3 tbsp. soy sauce
1-2 green pepper, cut in chunks
1 jar pimento

Brown beef in oil. Stir in onion, rice, seasoning packet, beef broth, water and soy sauce. Bring to boil. Reduce heat, cover and cook over low heat until liquid is absorbed, about 25 minutes. Stir in green pepper and pimento and heat through.
