ZUCCHINI PANCAKES 
2/3 c. Bisquick
1/4 c. melted butter
3 c. shredded zucchini, drained
1/2 tsp. garlic powder
1/4 c. chopped scallions with tops
2 eggs

Beat Bisquick, shortening and eggs. Stir in zucchini, garlic and onions. Fry on greased griddle. Use as potato pancakes.
